Pam said: “We found that there is a gap in the market for those who enjoy a gluten free diet, whether this is because they have coeliac disease or, more common now, a gluten sensitivity.  Gluten is a protein which is found in grains such as wheat barley and rye and some oats can be cross contaminated depending on where and how they are grown.

Interestingly a lot of sports people are also turning to a gluten-free diet purely because it has been proven to enhance their performance. Numerous Wimbledon players were reported to be following a gluten-free diet for example.

“So apart frcakeom those who have to follow a strict gluten-free diet due to avoiding detrimental health problems, others are actually choosing this lifestyle for its health enhancing properties.

“At Coffee Cloud we recognise that eating cake in moderation is an uplifting and enjoyable experience, so we felt that we would extend this pleasure to those who are gluten-free.  We have come up with a range of cakes that are just as delicious as our regular wheat flour cakes, in fact you wouldn’t notice the difference unless we tell you.  The alternative ingredients we use are rice flour, corn flour, polenta and ground almonds.

“We are aiming to always have a gluten-free option on display.”
